½ cup butter, softened
1 cup packed brown sugar
2 eggs
1 cup applesauce (I used about a cup and a half)
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon (I used 1 whole teaspoon)
1 cup raisins (I omitted)
2 cups (12 oz) butterscotch chips
1/3 cup sugar
¾ cup chopped pecans (I omitted)

In a mixing bowl, cream the butter and brown sugar. Add eggs and applesauce; mix well. Combine flour, baking soda, salt and cinnamon; add to the creamed mixture. Stir in raisins. Spread in a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with the butterscotch chips, sugar and pecans. Bake at 375 degrees for 25 minutes.

Editor's note - I left out the raisins and pecans and this cake is still quite awesome. I recommend a scoop of vanilla ice cream to top it off while it's still warm from the oven. Dig in!
